OK, so I rarely bake but the spirit of the season grabbed me and I was inspired to make these chocolate peppermint brownies! I definitely have a sweet tooth, so that obviously added to the, “inspiration”.
I haven’t baked in some time , it’s definitely not my forte, so I had to mentally switch gears for this and that meant allot of trial and error….ok, more error than trial….
The biggest hurdle for me with these was the frosting….since I wasn’t sure if I wanted to go with chocolate or vanilla….in the end I stuck with chocolate, cuz what goes best with chocolate peppermint brownies than more chocolate, right??
These turned out allot better than I had anticipated and I was more than happy with the end result! I’ll definitely be makin these again….especially since they’ve mysteriously disappeared after a visit from my brothers….
Peppermint Brownies Recipe-
1.5 cups sugar
1 cup-2 sticks unsalted butter melted and cooled
1 teaspoon vanilla extract
3 large eggs
1 cup all-purpose flour
Half cup unsweetened cocoa powder
1 teaspoon fine salt
Half teaspoon baking powder
6 tablespoons unsalted butter-melted
3/4 cup cocoa powder
1.5 teaspoons vanilla extract
Pinch of fine salt
4 cups confectioners sugar (1-pound box)
6 tablespoons milk
Preheat oven to 350 degrees farenheit
Line a 9 by 13″ baking pan with aluminum foil and spray with nonstick cooking spray.
In a medium bowl, stir together the sugar, butter, vanilla and eggs
Add the flour, cocoa powder, salt and baking powder all at once and stir until just combined. Bake until the brownies begin to pull away from the edge of the pan and set in the center, 30-35 minutes. Remove from oven and transfer to a wire rack to cool completely.
In the meantime make the frosting by combining the butter and cocoa powder in the bowl of a stand mixer fitted with a paddle attachment. Mix on low speed until combined. Add the vanilla and salt. Continue to mix on low speed, adding the sugar a cup at a time and alternating with additions of the milk. Increase the speed to medium-high and mix until smooth.
Spread the frosting onto cooled brownie and sprinkle chopped candy cane on top.
