I’ve never been too good about making food ahead of time, but I’m slowly trying to change that.To start things off, popsicles are my current focus. They’re easy enough to make and totally appropriate for the current hot weather (97 degrees here in Orange County today!). And aside from that, they’re a good way to get in handful of fruits that I might not otherwise eat chopped up. But in popsicle form, it’s like dessert on a stick.
For the popsicles you see here, I used a combination of dragon fruit, nectarines and coconut water. You definitely want to source the best and ripest fruit you can find as it will naturally sweeten the popsicles. If you find your popsicle mixture lacking some sweetness, just add a little agave or honey until it’s to your preference.
