For the popsicles you see here, I used a combination of dragon fruit, nectarines and coconut water. You definitely want to source the best and ripest fruit you can find as it will naturally sweeten the popsicles. If you find your popsicle mixture lacking some sweetness, just add a little agave or honey until it’s to your preference.
Unfortunately for me, my nephews discovered these in the freezer and they disappeared. Guess that’s a good sign though, right?
Dragon Fruit and Nectarine PopsiclesMakes 10 2oz. popsicles
2 whole dragonfruit (white or red flesh will work), skinned
3 large nectarines, seeded small jalapeno, finely diced
1 cup coconut water
1/2 cup lime juice
In a blender, add all ingredients and blend to until pureed.
Pour mixture into popsicles mold. Cover top of mold with foil and puncture a hole in the center of each well, insert popsicle stick. Chill for at least 4-6 hours, or overnight. *Freeze time will vary according to your freezer setting and how full it is.
