When you’re single, easy dishes like this Bacon and Leek Quiche are key. Otherwise Carls Jr., and the like, just makes dinner too easy. Thankfully, this recipe uses only 1 bowl and ten minutes to prep.
Eggs are a big part of my diet. They’re full of protein, but most importantly, easy to work with. Admittedly, I’ve never made quiche before so I had no idea how easy it is make. Now that I’m in the know, I’m going to be trying all kinds of add-ins and swap outs like: sausage and potatoes, chicken and broccoli, chorizo and cojito. The ideas are almost endless – a good thing when you’re single and don’t want to eat out as much as I used to.
- 1 9-inch pie crust
- 5 eggs
- 1 cup whole milk
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 6 oz. chipotle cheese
- 1 cup chopped leeks
- 8 strips cooked bacon, crumbled
- Preparation: Heat oven 350 degrees F. Roll out pie dough into 9inch tart pan. Set aside.
- In a large bowl, mix all remaining ingredients in a large bowl and pour into a tart pan. Transfer to oven and bake for 40 minutes
