I don’t cook as often as I should for myself, but I’m learning to. Outside of the fried egg, I’ll admit this is a little short on bonafide cooking—but everyone has to start somewhere…
so why not with avocado toast. It’s easy, simple and basically a canvas for any flavoring. This one is my current favorite, simply layered with avocado, a little olive oil, arugula, proscuiotto, and an egg.
It’s my go-to lunch lately since it doesn’t sit heavy after eating, but it packs enough protein that I can have this and a smoothie and I’m a good for a few hours.
I’m going to be working my way up to meals that actually involve more cooking, so stay tuned. Until then, l’m staying with fresh and fast food like this.
- 2 slice of bread
- 1 avocado
- 1 tablespoons olive oil
- ½ cup arugula
- 2 slices prosciutto
- 2 fried eggs
- Lightly toast bread slices. Split avocado in half and spread each half onto one piece of toast. Drizzle with olive oil. Top with prosciutto and fried egg. Serve immediately.
